Healthy Sausage Pasta Recipe

Hi bunnies! I’ve had another VERY long hiatus but I am back! I am on a quest to lose a bit of weight, so I do want to put up some healthy recipes. When people think of restricting what they eat, they think that flavor can’t be a part of it, which is not true. This is a really easy recipe that requires just a few ingredients and gets in a lot of nutrition and veggies.

Ingredients:

  1. Tomato sauce (preferably vegetable or organic; they tend to have more nutritional value) you can also substitute this with diced tomatoes.
  2. Turkey Sausage
  3. 1 Onion
  4. 1 bag of spinach
  5. Farfali Pasta (can be whole wheat; that’s even better!)
  6. Canola Spray
  7. Oregano
  8. Red Pepper Flakes
  9. Basil
  10. Parsley

Steps:

  1. Start to boil water in the small deep pan for the pasta. Put large deep saucepan on low-medium heat and pour 1 teaspoon of olive oil, or a bit of canola spray.
  2. Chop up sausage and put into the deep large saucepan; cover the pan and let the sausage brown.
  3. Chop vegetables; set aside.
  4. Start to put spices and herbs into the pan with the sausage
  5. Wait till sausage is browned, then put in the vegetables. Cover pan once again for about 2 minutes. Stir.
  6. While pasta is cooking, pour tomato sauce into the deep saucepan with the veggies and sausage and let simmer for about 5 minutes.
  7. Drain pasta and serve.

Spanish Steak Sandwich: Final Part (3) of the Alternative Food Series

Hi bunnies! This recipe will be the last portion of the Alternative Food series, I will be putting up many other BBQ recipes and recipes for people with alternative lifestyles.

This recipe is a sandwich recipe that is also Spanish, and the steak can be easily replaced with tilapia or large shrimp, or for the completely vegetarian, eggplant.

Ingredients:

  • Flank Steak
  • Any herbs and spices you may want to put on your steak (parsley, cumin, minced garlic)
  • Red wine for cooking/marinating, if you are using shrimp or tilapia, then use white wine.
  • Green Peppers
  • 2 Slices Manchego cheese
  • Bacon (optional!)

Steps:

  1. Marinate steak (or any other meat) in 1/2 cup of wine, three spoonfuls of garlic, and 2 teaspoons of parsley for about one hour.
  2. Drizzle olive oil in a medium-high heat pan and cook steak until cooked through.
  3. Drizzle olive oil in separate pan for the green peppers. Chop green peppers in half and grill them until browned.
  4. Layer steak, cheese, and peppers onto ciabatta bread, and serve! Feel free to squeeze a bit of lemon juice onto the top of the sandwich, and add whatever dressings you like.

Spanish Omelet (Tortilla) Alternative Food Series Pt 2

Welcome back bunnies! This is Part two of the Alternative Food Series, a feature on my blog where I give all of the vegetarian, pescatarian, gluten and dairy-free bunnies some good recipes.

This is a great recipe for the morning when you need a very filling breakfast, or even for dinner if you’re feeling extra-hungry.

Ingredients:

  • 2 eggs
  • 1 red pepper and 1 green pepper
  • 1 Onion
  • 1 Potato

Steps:

  1. Put a couple of drops of whatever oil you want in the pan; olive oil, butter, or even PAM spray.
  2. Chop up veggies, and fry them in the pan for about 3 minutes. Put in potatoes first, and wait until they are browned, then put in the rest of the vegetables. You can make a Spanish Omelet without any of the extra veggies and just potatoes, but I prefer this recipe.
  3. Beat eggs in a separate bowl, and pour into the pan with the cooked vegetables. Cook for one or two minutes, until it starts to look done around the edges of the pan. Then take a spatula and flip on the left and right side. Done!

*This picture is of a huge omelet made for 3-4 people, which is why it is not flipped!

Vegetarian Pasta Bake: Part 1 of the Alternative Food Series

Hi bunnies! I am starting out this week with a post on a vegetarian pasta bake that I learned how to make whilst I was in Spain. This is going to be part of a series that will include recipes for people who are vegetarian, pescatarian, dairy-free, and fit for all kinds of lifestyles.

Ingredients:

  1. Fusilli pasta (or any kind of round shaped pasta)
  2. 1 Green Pepper
  3. 1 Red Pepper
  4. 1 Onion
  5. Fresh Tomatoes
  6. Tomato Sauce
  7. Butter
  8. Cheese (mozzarella is ideal for this dish)
  9. Olive Oil

Steps:

  1. Boil pasta in hot water.
  2. Cook peppers and onions (chopped up into chunks) in a pan on low-medium heat in a drizzle of olive oil for about three minutes.
  3. Add tomatoes and tomato sauce into the veggie mix.
  4. In a deep dish, layer and mix pasta and peppers into the dish.
  5. Layer slices of mozzarella cheese on top. You can do one or two layers, depending on your cravings that day!
  6. Smooth just one pat of butter on top of the cheese, and a little more on the edges to make it crispy.
  7. Put inside a toaster oven (if yours is large enough) or the oven at 350 degrees for about 20-30 minutes. Once you take it out it is ready to serve!
