Hi bunnies! I’ve had another VERY long hiatus but I am back! I am on a quest to lose a bit of weight, so I do want to put up some healthy recipes. When people think of restricting what they eat, they think that flavor can’t be a part of it, which is not true. This is a really easy recipe that requires just a few ingredients and gets in a lot of nutrition and veggies.
Ingredients:
- Tomato sauce (preferably vegetable or organic; they tend to have more nutritional value) you can also substitute this with diced tomatoes.
- Turkey Sausage
- 1 Onion
- 1 bag of spinach
- Farfali Pasta (can be whole wheat; that’s even better!)
- Canola Spray
- Oregano
- Red Pepper Flakes
- Basil
- Parsley
Steps:
- Start to boil water in the small deep pan for the pasta. Put large deep saucepan on low-medium heat and pour 1 teaspoon of olive oil, or a bit of canola spray.
- Chop up sausage and put into the deep large saucepan; cover the pan and let the sausage brown.
- Chop vegetables; set aside.
- Start to put spices and herbs into the pan with the sausage
- Wait till sausage is browned, then put in the vegetables. Cover pan once again for about 2 minutes. Stir.
- While pasta is cooking, pour tomato sauce into the deep saucepan with the veggies and sausage and let simmer for about 5 minutes.
- Drain pasta and serve.
